Water soluble fiber

Dietary fiber is best regarded as comprising two major types: water soluble fiber, such as pectin and water-insoluble fiber, such as cellulose.

Most of the fiber in plant cell walls is water-soluble. Soluble fiber promotes regular bowel movements and aids in weight loss by slowing down the passage of food and giving a full feeling.

Soluble fiber is made up of non-cellulose carbohydrates, including pectins, gums, algal polysaccharides and some types of hemicellulose.

Water soluble is important it binds substances including bile salts and cholesterol, thereby reducing lipid uptake by the intestines.

Thus water-soluble fiber minimizes the absorption of cholesterol in the food and reduces cholesterol produced by the body.

Soluble fiber is useful in the management of diabetes, hypoglycemia, hyperglycemia and other conditions that affected by the quick breakdown of carbohydrates into glucose, a form of sugar.

Food sources of insoluble fiber include barley, beans and peas, lentils, oat bran, fruits and vegetables. Eating oat bran (2 oz.) regularly each day may effectively lower blood sugar levels.

Carbohydrate definition and food sources

With the energy value of 4 calories, carbohydrates are one of the most basic nutrients in foods. They are indispensible in foods by virtues of their role as sweeteners, thickening, bulking and gelling agents.

Carbohydrates are composed of three elements: carbon, hydrogen and oxygen. The word carbohydrate was originally derived from the fact that the greater part of the compound in this class had the empirical formula Cn(H2O)n. The values of n range from three to many thousands. The number and arrangement of these elements in the carbohydrate molecule differentiate one carbohydrate from another.

This formula now considered too restrictive and a more useful definition might be ‘polyhydroxy aldehydes or ketones and their derivatives’. This later definitions encompass deoxy sugars, sugar alcohols, sugar acids, amino sugars.

Plants are the primary sources of carbohydrates in the human diet. Carbohydrates occur in fruits and vegetables as storage reserves in seeds, roots, and tubers; in the sap; and as constituents of the structural tissues, they are also found in the milk, blood, and tissues of animals.

Carbohydrate should make up about 5/7 of the solid part of the diet and ideally no more than 2/7 of the carbohydrates should be refined sugars such as glucose.

Food sources of bioflavonoids

Bioflavonoids are a group of polyphenolic compounds that are widely distributed in the plant kingdom.

Bioflavonoids were first discovered in citrus peel. The white pulp of citrus fruits is also a rich source. Citrus fruit is containing the bioflavonoids hesperidin and naringin.

Peppers, buckwheat, blackcurrants and the white material just beneath the peel of citrus fruits contain flavonoids.

Sources of bioflavonoids include apricots, blackberries, cherries, grapefruit, grapes, lemons, oranges, plums and prunes. Herbs that contain bioflavonoids include chervil, elder berries, hawthorn berry, horsetail, rose hips and shepherd’s purse.

Other foods high in bioflavonoids are cacao and green tea. Tangerine juice is a very rich source of tangerine and nobiletin.

Vitamin B of biotin

Vitamin B7 or biotin also known as vitamin H. Biotin acts as coenzymes during the metabolism of protein, carbohydrates and fatty acids synthesis. It performs important functions in the gluconeogenesis processes and in ensuring the proper growth.

Eating raw egg whites over a long period – months or years can cause biotin deficiency. Raw egg white contains the substance, avidin, which ties up biotin. Deficiencies of biotin cause scaling skin, skin lesion and a deterioration of nerve fibers.

This nutrient is somewhat unique among the water-soluble vitamin because human obtain it from both diet and via biotin-producing bacteria in human large intestine.

Liver is an excellent source of biotin, and peanut, peas, beans, and whole cooked eggs are good sources. Other good sources of biotin include cauliflower and cheese.

Vitamin E Sources and Functions

It was discovered in 1922 in vegetable oil given the name ‘tocopherol’. Vitamin E, of which there are four different forms, is fat soluble.

The four have the same name except with the prefixes alpha-, beta-, gamma-, and delta-, (the first four letters of the Greek alphabet).

Only alpha-tocopherol contributes toward meeting the human vitamin E requirement and it is the most common form of vitamin E in food.

It is our body’s major fat soluble antioxidant. It protects vulnerable polyunsaturated lipids in cell membranes, in blood and elsewhere throughout the body.

The richest dietary sources of vitamin E are the vegetable oils. Safflower and olive oil contain the highest proportion of alpha-tocopherol, followed by soybean oil.

Curiously enough, these oils are also the richest sources of polyunsaturated fatty acids, which vitamin E protects from oxidation.

Nuts and seeds such as sunflower seeds, are among the best food sources.

In western diet, vitamins E intake derives mainly from fats and oils contained in margarine, mayonnaise, salad dressing and desserts, and increasingly also from fortified food (e.g., breakfast cereals, milk, fruit juices).

Vitamin E helps reduce oxidation of lipid membranes and the unsaturated fatty acids and prevents the breakdown of other nutrients by oxygen.

Some scientists compare the function of vitamin E on the cell membrane to a lightening and nullifying the damage that occurs of lightening strikes. This function of vitamin E is also performed and enhanced by other antioxidants, such as vitamin C, beta-carotene, glutathione (L-cysteine), coenzyme Q and the mineral selenium.

In fact, there is a direct recycling process for vitamin E that requires the immediate presence of beta-carotene, vitamin C, flavonoids, and coenzyme Q to work.

Observational studies have suggested that high intake of antioxidant including vitamins E, may lower the risk of some chronic disease, especially heart disease.

We rarely eat too little sodium; in fact, most of us eat substantially more than we need. Actual sodium requirements by the body are relatively small – only a few hundred milligrams daily.

In order to make sure that the diet contains adequate amounts of all nutrient, however, the Food and Nutrition Board set the Al for sodium for adults at 1,500 milligrams per day.

The Tolerable Upper Intake Level for sodium is 2,300 milligrams per day. This suggested maximum level is echoed in the American Heart Association’s Diet and Lifestyle Recommendations.

The typical American diet contains 3,000 to 6,000 milligrams of sodium daily. Not only do Americans consumes more than the recommended amounts of sodium, but they also are poor judges of the amount of sodium in their diets.

Surprisingly, processed foods – not table salt - contribute the most sodium.

70 % of the sodium in the American diet comes from processed foods. In addition to being higher in sodium, these foods are often lacking in many other nutrients such as fiber and antioxidants.

Soy sauce and other sauces; pickled foods; salty or smoked meats, cheese and fish; salted snack foods; bullion cubes and canned and instant soups are all high sodium foods.

Seasoning based in salt ( e.g. lemon salt and seasoning salt) and those containing the flavor enhancer monosodium glutamate (MSG) are also high in sodium.

If your diet is cased on Asian foods that contain liberal amounts of soy sauce and MSG you could be taking in 12,000 to 16,000 milligrams of sodium per day.

Your intestinal tract absorbs nearly all dietary sodium, which then travels throughout the body in the bloodstream. Your kidneys, those remarkable organ, retain the exact amount of sodium the body needs and excrete the excess sodium in the urine along with water.

Taking in too much sodium and not enough water can worsen dehydration. The old practice of giving athletes salt tablets before or after exercise is unnecessary and possibly harmful.

On the other hand, radical sodium restriction is not a good idea either. Even though most American consume to much sodium, severe sodium restriction can limit the availability of other essential nutrients such as vitamin B6, calcium, iron and magnesium.
