Nutrition value of mushrooms shiitake

Shitake mushrooms have excellent nutritional value. Shiitake is a good source of potassium and including the stems, zinc, and important element for immune competence.

Their raw fruit bodies include 88-92% water, protein, lipids, carbohydrates as well as vitamins and minerals. It is also a rich source of complex carbohydrates called polysaccharides.

Mushrooms are higher in essential amino acids than soya beans, kidney beans, peanuts or corn.

Shiitake mushroom contain eighteen amino acids, seven of which are essential amino acids.

Fresh mushrooms generally have about double the proteins of vegetables and are low in calories. They are rich in B vitamins, especially vitamin B1 (thiamine) and B2 (riboflavin), niacin, iron and phosphorus.

For dried shiitake mushrooms are rich in carbohydrates and protein. They contain 58-60% carbohydrates, 20-23% protein, 9-10% fiber and 3-4% lipids and 4-5% ash.
